I have no idea why I have never owned  a Waffle Maker before. However I’m thrilled that I now own a Breville No Mess Waffle Maker.

This waffle maker really made my FIRST experience making waffles super easy!!

Features that I liked about the Breville No Mess Waffle Maker:

– it has a wide wrap around moat that catches the over flow. Which also makes cleaning up, really easy!

– you can select your preferred color from light and fluffy to crispy golden brown. #loveit

-the best part? It BEEPS when the waffle is ready. How cool is that?

I’m delighted to announce that this is what my morning breakfast looked like!waffle - final

Here’s the recipe I used. (taken from www.bettycrocker.com)

INGREDIENTS

2 eggs
2 cups all purpose flour
1 tablespoon sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 3/4 cups milk
1/2 cup vegetable oil or melted butter (I used melted butter of course)
Fresh berries, if desired

DIRECTIONS

1. Heat the waffle maker

2. In large bowl, beat eggs with wire whisk until fluffy. Beat in remaining ingredients except berries just until smooth.

3. Pour slightly less than 3/4 cup batter onto centre  of hot waffle iron. Close lid of waffle iron.

4. Bake about 5 minutes or until steaming stops. (I simply had to wait for my waffle maker to BEEP!!)

5. Carefully remove waffle. Serve immediately. Top with fresh berries. Repeat with remaining batter.

I promise that you will continue to make waffles on a regular basis as the Breville No Mess Waffle Maker really delivers.

P.S. Now it’s time for me to host a brunch with a Waffle Bar. I’m already thinking about the topping options – whipped cream, strawberries, blueberries,  raspberries, banana chips, nutella, chocolate chips, chopped pecans etc. OH MY!!

On Sunday morning, I made a perfectly good lookin’ French Toast to serve to my daughter. However I was still staring at half a loaf of challah and then said to myself: “Vicky…now is the time to try that recipe for Individual French Toast Muffins that you saw on Pinterest 3 years ago!!”.

Here’s the recipe that I used from the website: Two Peas and Their Pod

INGREDIENTS:

1 loaf French bread, cut or torn into 1/2 inch cubes  (I used half a loaf of a whole wheat challah)
2 1/2 cups milk
6 large eggs
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon

For the Cinnamon Streusel Topping:

1/4 cup cold butter
1/4 cup light brown sugar
1/4 cup all-purpose flour
1/8 teaspoon ground cinnamon
Pinch of salt

Butter and Maple Syrup, for serving, optional

DIRECTIONS

1. In a medium bowl, whisk together the milk, eggs, sugar, vanilla, and cinnamon.

2. Grease a 12 cup muffin tin. Add a handful of bread cubes to each muffin cup. Carefully pour egg and milk mixture evenly over each muffin tin. You may need to press down on the bread cubes after you pour a little mixture and then pour more. Pour slowly or you will have a mess. Cover the muffins with plastic wrap and refrigerate for 2 hours or up to overnight. (I refrigerated it for 2 hours)

3. When ready to bake, preheat the oven to 350 degrees F. To make the cinnamon streusel, in a small bowl, combine butter, brown sugar, flour, cinnamon, and salt. Mix together with your hands, until you have a crumbly mixture. Remove the muffins from the refrigerator and sprinkle the muffins evenly with the streusel topping.

4. Bake for 25 minutes or until tops are golden brown. Let muffins cool for 5 minutes. Remove from pan and serve with butter and maple syrup, if desired.

FINAL PRODUCT

How cute? I can’t wait to serve these at a brunch one day soon. I have a feeling they will be a hit!

For some reason I don’t go out for brunch a lot, however lately I’m been working on that!! Here’s a few restaurants that I’ve visited for brunch over the last few months.

DIM SUM KING

I was introduced to this restaurant when I attended a book launch for Corey Mintz. So last week when I went to the AGO to see the Alex Corville Exhibit, I knew that this would be the perfect place to satisfy my dim sum craving! The restaurant is huge, there’s linens on the tables and they have carts too! As for my dim sum – thumbs up!

LINDA MODERN THAI

This stunning restaurant has recently introduced a brunch menu and I was lucky enough to get invited to try it out. Items such as Thai Banana Egg Pancakes and Eggs Benedict Thai Style are popular items so that’s what we ordered. BOOM BREAKFAST

This popular restaurant has 5 locations and has an item on the menu called the Threesome (pancakes, sausage and eggs). Apparently it’s the most popular item on the menu!!  Their acronym TGIM (Thank God It’s Morning) always puts a smile on my face too. Oh how I love creative marketing.
