I’ve been in food sales for about 10 years now, although at one point I took a 3 year break. I really enjoy being on the road and spending time in my car roaming around to existing customers and prospecting new customers as well.

Last month I started a new job and at the same time I made a resolution to try and bring snacks-from-home to nosh on during the day. I’m motivated to spend less $$ and to watch my waistline too.

So every morning before I head into my car (which is really my office) I slice up some veggies, grab some almonds, and a few rice crackers too and stick them into little containers.

However I always seem to grab a coffee somewhere during  the day and with that coffee I want/need a “treat’ but I want a wholesome treat!!  Therefore I’ve been gravitating towards these two products to go along with my coffee.

I’m also a fan of the Good & Simple Muffins which are also available in three different flavours:  Fruit + Fibre (with Blueberries and Cranberries), Banana Bran or Chocolate Chip Oatmeal.

Good & Simple Muffins and Bars are delicious fresh-tasting baked goods that can be enjoyed anytime, anywhere.  For me, this means I’m enjoying them in my car!

Made with real ingredients such as blueberries, cranberries, bananas, walnuts, chocolate chips and flax seeds, each Good & Simple Muffin and Bar is made with whole grains and with no artificial flavours or colours. The combination of ingredients creates a wonderful texture and flavour experience which I’m really enjoying.

These wholesome snacks are individually wrapped making them perfect for on-the-go snacking. Once again, this is perfect for my situation as I’m on-the-go more than the average person.

You can find Available at the in-store bakery at Metro and Freshco grocery stores.

Now that my car is fully stocked with snacks, I’ve been less tempted to spend $$ and be more mindful of the snacks I’m selecting.  As for the job….it’s been a great month in that respect too! Promise to blog more about exactly what I’m selling in the near future. Promise.

On Sunday morning, I made a perfectly good lookin’ French Toast to serve to my daughter. However I was still staring at half a loaf of challah and then said to myself: “Vicky…now is the time to try that recipe for Individual French Toast Muffins that you saw on Pinterest 3 years ago!!”.

Here’s the recipe that I used from the website: Two Peas and Their Pod

INGREDIENTS:

1 loaf French bread, cut or torn into 1/2 inch cubes  (I used half a loaf of a whole wheat challah)
2 1/2 cups milk
6 large eggs
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon

For the Cinnamon Streusel Topping:

1/4 cup cold butter
1/4 cup light brown sugar
1/4 cup all-purpose flour
1/8 teaspoon ground cinnamon
Pinch of salt

Butter and Maple Syrup, for serving, optional

DIRECTIONS

1. In a medium bowl, whisk together the milk, eggs, sugar, vanilla, and cinnamon.

2. Grease a 12 cup muffin tin. Add a handful of bread cubes to each muffin cup. Carefully pour egg and milk mixture evenly over each muffin tin. You may need to press down on the bread cubes after you pour a little mixture and then pour more. Pour slowly or you will have a mess. Cover the muffins with plastic wrap and refrigerate for 2 hours or up to overnight. (I refrigerated it for 2 hours)

3. When ready to bake, preheat the oven to 350 degrees F. To make the cinnamon streusel, in a small bowl, combine butter, brown sugar, flour, cinnamon, and salt. Mix together with your hands, until you have a crumbly mixture. Remove the muffins from the refrigerator and sprinkle the muffins evenly with the streusel topping.

4. Bake for 25 minutes or until tops are golden brown. Let muffins cool for 5 minutes. Remove from pan and serve with butter and maple syrup, if desired.

How cute? I can’t wait to serve these at a brunch one day soon. I have a feeling they will be a hit!

I saw this recipe back in February (from Pinterest? Twitter?) and finally got around to making it. Naturally I didn’t follow the recipe exactly so I encourage you to look at this blog post first….click here). 

I adore recipes that take an original recipe and just by baking it in a muffin tin – presto – you have a total new appreciation of lasagna!

LASAGNA CUPCAKES (adapted from www.howtosurvivelifeinthesuburbs.com)

1 package of Olivieri®  lasagna sheets

1 cup of ricotta

2 eggs

1 cup of shredded mozarella

1 cup of your favorite pasta sauce

1 package of frozen spinach, thawed (optional)

1 tablespoon of dried basil

INSTRUCTIONS

1. Preheat oven to 375. Spray your Muffin Pan with Pam® (this will allow your lasagna cupcakes to come out with ease and help with clean up afterwards).

2. Cut the lasagna sheet into squares that will fit your muffin pan.(I used scissors for this step).  Place the lasagna “squares” into the muffin tray.

3. Whisk the ricotta cheese and eggs together till it’s nice and smooth.

4. Add a generous dollop of pasta sauce into the muffin pan (spread generously). Then add the ricotta cheese mixture. Then sprinkle  the mozzarella cheese on top. Then add another lasagna square. Repeat – dollop of pasta sauce, then ricotta cheese, then mozzarella. Add another lasagna square. Add tomato sauce. Sprinkle with mozzarella and dried basil.

5. Bake 25 minutes in a pre heated 375 degree oven.

I served these lasagna cupcakes to guests on a Sunday night along with Asparagus Soup and a Curly Cucumber Salad. Everyone was pretty happy. Naturally the leftovers went into the freezer and will come in handy one day when I’m low on groceries or have no time to make dinner!! (it happens to all of us, right?).
