I adore mini desserts these days and my guests appreciate them too.

I also love combining chocolate with fruit!!

So when I was introduced to Second Cup Coffee Co.’s New Hot Chocolate Cookie, all I could think of is how divine it would be to incorporate this cookie into a particular dessert that I’ve made before.

The previous dessert called for “graham cracker crumbs” and to be honest, it’s not something I have in my pantry all the time. (er…never). However I know that every day I pass a Second Cup and can easily pick up their new Hot Chocolate Cookie.

I won’t keep you waiting for the recipe much longer. Here you go!

STUFFED STRAWBERY CHEESECAKES BITES

Ingredients:

12 strawberries

1/3 cup of soft cream cheese ( a little goes a long way)

1 tsp of vanilla

1/2 of a Second Cup Coffee Co’s Hot Chocolate Cookie

Instructions:

1. Using a sharp knife, dig a cavity into the top of the strawberry

2. Using the same knife, also take the bottom off so the strawberry stands up nice and pretty

3. Mix the cream cheese and vanilla with a fork

4. Break up half of a Second Cup Coffee Co’s Hot Chocolate Cookie (feel free to just eat the remaining half.  Yum!)

4. Carefully spoon the cream cheese mixture into the cavity of the strawberry.

5. Sprinkle the top of the strawberries with the crushed up pieces of the Hot Chocolate Cookie!

6. Serve or refrigerate till ready to serve.

Recently I attended the launch of the new Flat White at Second Cup. It was a great excuse to wear white ….AND I love my morning coffee. Kudos to the publicists for encouraging guests to wear white and for having the event at 10 am.!

See how happy I am?

Coffee...Vicky....Happy The new Flat White features more espresso and less steamed milk. I was a fan after my first sip! I could taste the bold flavour and loved the creaminess of the the micro foam.

It’s bold with without being bitter and velvety without using an excess of milk. Of course, I paired it with a beautiful butter tart. …I just couldn’t resist. I now live across the street from Second Cup and know that I will be ordering the Flat White on a regular basis. Sadly the butter tart will only be a treat – once in a while!!

PS Look out for this unique Flat White Piaggio truck this weekend at Second Cup at 355 Danforth Avenue on Saturday Sept 20 from 1 to 8 pm and on Sunday Sept 21 from 1 to 8 pm

Can Anyone Relate to This Photo?

I have a coffee every day? Do you? I have a coffee card for Tim Hortons, Second Cup and Starbucks and I use them regularly. I love independent coffee shops too. Some of my favortites include: Manic, Sam James, Ezras Pound, Jimmys and Dark Horse Espresso Bar.

Coffee is my chance:

-sit down for a minute and read a book or a newspaper

-to meet a friend and catch up

Unlike the photo to the left…I just have a normal black coffee!! No special lattes.

I seriously think about what it would be like NOT to have a coffee every day. Not sure I could do it. Could you? Lately I have been grating ginger into boiling water and I am completely enjoying it. However I still have this NEED to have a coffee.

I’m known sometimes as the “friend who delivers coffee” as I often drop off coffee to friends who cant get out of the house cause they are sick, or their kids are sick, or they are in mourning over a loss, or just had a baby etc.  It’s a small act of kindness but  I love knowing this small gesture makes a difference in their day.

So as I write this..I’m wondering when Tim Hortons is starting their Roll up and Win campaign. I’m already looking forward to it.  Wonder if this year, I might win a bit more often. Wishful thinking. I know.
