Natrel recently launched  a line of Lactose Free butter and an Organic butter too. I can’t tell you how happy I was when I received the press release which announced this news.

There are only two ingredients in this butter: Lactose Free Cream and Sea Salt.

Other info you should know: at the moment it’s only available in a 250 gram package and I only saw “salted butter” on the shelves. The organic butter is only available in Ontario + Quebec, and the lactose free in Ontario, Quebec + the Atlantic provinces.

As someone who is lactose free, I can’t wait to bake some of my favourite recipes with this product without having to take a lactose free pill. I’m beyond excited.

I’m also excited to let you know about Natrel’s The Greatest Dessert Exchange which is currently underway! It’s a pretty cool ideal. Here’s a recipe for a Big, Soft Ginger Cookie thats perfect for this time of year. Of course I used Natrel lactose free butter for the recipe. The best part was that I could actually lick the beaters without having to take a lactose pill. Yes Im a 51 year old adult!!

Big, Soft Ginger Cookie (original recipe from www.tasteofhome.com)

Ingredients:
3/4 cup Natrel lactose free butter, softened
1 cup sugar
1 large egg
1/4 cup molasses
2-1/4 cups all-purpose flour
2 teaspoons ground ginger…be generous!
1 teaspoon baking soda
3/4 teaspoon ground cinnamon…be generous!
1/2 teaspoon ground cloves…be generous!!
1/4 teaspoon salt
Additional sugar in a small bowl

Yay lactose free cookies!

Directions
In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture and mix well.

Roll into 1-1/2-in. balls, then roll in sugar. Place 2 inches apart on ungreased baking sheets. (they expanded more than I thought so don’ t overcrowd your sheet). Bake at 350° until puffy and lightly browned, 10-12 minutes. Remove to wire racks to cool. Yield: 2-1/2 dozen.

Note: My first batch wasn’t as flavourful as I wanted them to be so I added more spice for the second batch and was MUCH happier.

I’m not sure what the stats are but I know that many Canadians are lactose intolerant, gluten-free or have a peanut allergy. Myself included. I’ve been lactose free for about 8 years now and I carry around lactose pills with me everywhere (purse, kitchen, car, pockets) so that I can continue to enjoy dairy products (which I love).

Sometimes it can be hard to know where to shop and how to choose products and ingredients that have the quality and flavours you crave. For many Canadians, this means that meal-planning has become predictable, routine and, well, bland.

However, the President’s Choice® team is dedicated to helping all Canadians find freedom in “-free” products, by showing consumers they can explore new and unexpected flavours and embrace culinary trends, no matter their dietary needs.

I’m loving this initiative that President’s Choice® has launched and recently noticed this giant poster at Loblaws.

While grocery shopping, I picked up some PC® SKYR which is lactose free and has more protein in in than traditional greek yogurt. #fact.

Then I went home and made a delicious French Yogurt Cake using the PC® SKYR. Guess what? I can enjoy this cake WITHOUT taking a lactose pill. HOORAY. HOORAY.

Here’s the recipe for French Yogurt Cake (courtesy of BonAppetit)

Ingredients:
1 1/2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
3/4 teaspoon kosher salt
1 cup sugar
1 tablespoon finely grated lemon zest
3/4 cup whole-milk Greek yogurt
1/2 cup vegetable oil
2 large eggs
1/2 teaspoon vanilla extract

Directions:

1. Preheat oven to 350°. Coat pan with vegetable oil spray. Dust with flour; tap out excess.
2.Whisk 1 1/2 cups flour, baking powder, and kosher salt in a medium bowl.
3. Using your fingers, rub sugar with lemon zest in a large bowl until sugar is moist. Add yogurt, oil, eggs, and vanilla extract; whisk to blend. Fold in dry ingredients just to blend.

ADORE recipes that only requires two bowls.

4. Pour batter into prepared pan; smooth top. Bake until top of cake is golden brown and a tester inserted into center comes out clean, 50–55 minutes.

Oh how I love food shows. Today I attended Grocery Innovations  in search of new product that will be hitting the grocery shelves.  I have to admit..I don’t mind receiving samples either! Can you tell?

This year, I discovered the following new products:

a) Olympic has introduced CHIA Balkan Style Yogurt that is Probiotic with 100% natural ingredients. It’s also Lactose free, Gluten free and Gelatin free. I think..scratch that.I know that this product is going to be HUGELY successful.

b) Crisco has introduced ONE CUPS STICKS. YAY. For those of you who are occasional bakers – this is BRILLIANT. I swear I have 2 sticks of Crisco in my cupboard that have been there way too long. Now I won’t have that problem anymore.

C) SILK has introduced a Creamy Cashew Milk. Seeing as I’m lactose free – all these varieties appeal to me.
