I was tired of my standard salmon recipes, so I did some research on the internet and found a new recipe that appealed to me. I love how easy it is to find a new recipe these days. Long gone are the days where I use to sit at the kitchen table sifting thru 6 cookbooks. (or more)

The recipe only included a few ingredients and sure enough..I had most of them in my fridge and pantry.

Here’s the official recipe for Garlic Panko Salmon (from www.primaverakitchen.comI used half of the recipe (errr..the ingredients) and then used my own method. Keep reading!!

Ingredients
  • For the Salmon
  • 518g salmon fillets (I bought a big slab of salmon from Costco)
  • Salt and pepper
  • 1 1/2 tablespoons of Dijon
  • 1 tablespoon of honey
  • For the Garlic Panko
  • 2 tablespoons olive oil
  • 4-6 cloves garlic, minced, depending on how garlicky you like it
  • ¾ cup panko crumbs
  • 1 tsp lemon zest
  • 1 teaspoon parsley, chopped (I used more…lots more)
  • Sea salt and fresh ground pepper
Instructions (according to momwhoruns!)
  1. Preheat oven to 375 F degrees.
  2. Spread the dijon mustard and honey onto the salmon.

3. In my Cuisinart Food Processor – I whizzed up the parsley, lemon, garlic and panko bread crumbs.

4. Spread this mixture over the salmon

salmon - final5. Bake for 30-40 minutes (depending on the size of your salmon)

6. Serve Warm!

I love trade shows and consumer shows. Especially if they are about FOOD. (My favourite subject. Did you know that?). Last week I walked thru Grocery Innovations looking for new food items, new flavour profiles and interesting packaging. This is an annual trade show for food companies, buyers, manufacturers, and distributors. Not to mention it’s a show that I’ve been attending for years as I was a food sales rep at one point in my career!! (fyi).

Here’s a few items that caught my attention:

ORANGE KIT KAT. I adore the combination of orange and chocolate and believe that this item will be a hit. Agreed?

LIVE HAPPY WATER. Water continues to be a huge trend and I’m happy just LOOKING at their booth!! Fact: This water contains naturally occurring lithia and other minerals. Plus it’s sourced from two ancient Canadian mountain springs.

QUINOA BARS: I love this concept and I think consumers will too. What do you think?

WHOLE WHEAT PANKO: What a great idea and will certainly be buying this in the future. The only comment I have for this company is “What took you so long”?.

There was also an abundance of coconut water and gluten free products at the show as well. But for some reason, the above products stood out. Stay tuned for a blog post about the Whole Wheat Panko as I went home and made a recipe with my sample box as soon as I got home!!

I’m always looking for new fish recipes, seeing as I haven’t had any meat in my kitchen for the last two decades!!

Lately I’ve been using Panko Crumbs but I was getting bored of using them so I went over to Pinterest to get some inspiration. (which I’ve been doing a lot of lately).

I found a Popchips Recipe Board and saw that one recipe featured  Popchips crusted baked buffalo chicken tenders! I said to myself: “hmm..bet I could recreate this with fish”. So I did. Bye Bye Panko Crumbs. Hello Popchips!!

Here’s what you need:

INGREDIENTS

2 pieces of sole, thawed

2 egg whites

2 small bags of Popchips (I used the nacho cheese flavour)

a few dashes of Tobasco Buffalo  Sauce (optional)

DIRECTIONS:

1. In a food processor, pulverize the Popchips. Add a few dashes of Tobasco Buffalo Sauce for additional flavour (optional)

2. Put out two plates: one for the Popchips. One for the egg whites. Dip the fish into the egg whites and then dip into the crushed Popchips until well coated.

3. In a heated frying pan, add some oil. (I used coconut oil for my first time…yay for coconut oil)

4. Place the fish into the frying pan and cook for a few minutes.

Hope you get a chance to snack on some Popchips soon or use them in a recipe like I did!! These chips will soon become a favorite. Promise.
