I make a batch of banana muffins about twice a month. They are the perfect snack, freeze beautifully and the muffins are a nice addition to a lunch box as well.

Recently I was introduced to the Guiding Stars program which is now available at No Frills, Loblaws and Real Canadian Superstores. Next time you are shopping, look for these signs which indicates a “better choice”.

Here are two examples of Star Ingredients:

★★ Whole Wheat Flour
★★★ Whole Spelt Flour

Therefore you could take my amazing banana recipe and make it even healthier just by using an Omega-3 Egg or by adding a high-fibre cereal, flaxseeds, hemp hearts and/or your favourite nut to turn this snack into a healthy breakfast option!

See what I mean? It doesn’t take a lot to make an ordinary recipe a much healthier recipe!! Plus the Guiding Stars program is an easy way for you to accomplish this.

Once again, look out for these blue stars!

Here’s my banana muffin recipe but feel free adapt it with Star Ingredients!

Ingredients

2 cups of mashed bananas (about 5) Note: the darker the better
3/4 cup granulated sugar
1 egg (see options below with Star Ingredients)
1/3 cup melted butter
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 1/2 cups all purpose flour (see options below with Star Ingredients)

Star Ingredients

Egg
★★ White Eggs – Large
★★★ Omega-3 Eggs

Flour
★ White Flour
★★ Whole Wheat Flour
★★★ Whole Spelt Flour

Note from In-Store Dietitian, Lauren Baker:
Add Ground Flaxseed
Add Hemp Hearts
Add Cinnamon + Vanilla
Add “crunch” with Bran Flakes or Quick Oats

I really do believe that homemade muffins are a convenient snack for on-the-go routines, and can be lower in saturated fat, sugar, and calories than store bought or fast-food alternatives! For improved portion control, try making mini-muffin and enjoying only one or two with your morning coffee. Its a win-win!!

It’s that time of year where the Jewish Community is entertaining. Conversations go like this:

Me: Will you be entertaining over the holidays?

Friend:  Having 1o guests for dinner on Sunday night and on Monday night, 16 guests are coming over. For lunch we got invited to X house on Monday and X house on Tuesday.

Me: I’m off to Ottawa. I won’t be cooking a lot but will be bringing in kasha and bow ties for my parents and some challah buns for my friend.

So let’s talk about those challah buns. You see, I saw a link for 20 Rosh Hashanah Inspired Dinner Ideas by www.shiksaguide.com.   I shared it on Facebook and asked my friend in Ottawa if I should make #16 and bring it her house for lunch. She replied: Yes Please.

So I assembled the ingredients: (P.S. for the complete recipe please click here).

-small frozen Challahs (available at No Frills at Bathurst/Wilson).

– 1/2 cup of Craisins

– 1/2 cup of PC  Semi Sweet Chocolate Chips

-Zest from one orange.

Then I had fun breaking the challahs apart and stuffing them with the combo of chocolate chips, orange zest and Craisins, and the forming them into little knots. The last step was a quick egg wash. Then they went into a preheated oven at  325 F for 20 minutes.

From those six small frozen challahs, I got 12 small DELICIOUS stuffed buns. They were almost like a dessert bun. Next time, I think I’m going to stuff with them with apples and cinnamon. Seriously, one could get very creative with this recipe!!

I also bought 16 honey sticks for each guest. I took this idea also from facebook as I follow these four fabulous sisters who have a blog called Dinner Table HQ. When I read their latest blog post about Rosh Hashana and the Dinner Table, I said “wow I like that idea” and went out and bought some honey sticks at Wychwood Farmers Market.

Disclosure: In the past, I’ve been known to buy imperfect fruit and vegetables. Yes – I’m that woman lurking around the stand for over ripe bananas and slightly bruised apples. You see, I really like using them when I bake.

Now Loblaws has made this easy for me as they have recently introduced no name® Naturally Imperfect line of fruits and vegetables.. Starting with apples and potatoes, no name Naturally Imperfect produce costs up to 30 per cent less than traditional produce options found in store. You gotta love it!!

Smaller misshapen produce that tastes great and is good for you, is now available at Real Canadian Superstore® and select no frills® locations in Ontario and select Maxi® stores in Quebec. Furthering its commitment to offer affordable, quality products to customers. YAY.

Please note that my bag contained smaller apples – not one was bruised – and they were delicious! Naturally I was excited to bake with them, so I pulled out my handy APPLE DAPPLE recipe that I’ve been making for years.  Notice where this recipe comes from? HOMEMAKERS! (see bottom of the recipe for proof). How funny is that?

APPLE DAPPLE CAKE (taken from HomeMakers)

1 cup sugar (I always use less)

6 tablespoons butter or margarine

1 egg

1 tsp vanilla

1 cup of all purpose flavour

1 tsp baking soda

1 tsp cinnamon

1/4 tsp nutmeg (if you want)

2 cups of apples (of course, I used the Naturally Imperfect apples)..peeled and cored and cut up into pieces. I didn’t peel them but I think I will next time!!

DIRECTIONS

1. In a medium bowl, beat together sugar, butter, egg and vanilla until well combined.

2. In a small bowl, combine flour, baking soda, cinnamon and nutmeg.

3. Add dry ingredients to sugar mixture and stir until well combined.

4. Stir in Apples.

5. Lightly pat batter in a square baking pan.

6. Bake in a 350 degree oven for 40 minutes.

SERVE WITH ICE CREAM.

If you asked me “what is my definition of a healthy meal?”…this is how I would reply.

The meal would consist of fruit, veggies, protein and some carbs.  Now how would I ensure that these meals would appeal to kids?  Let’s see…here’s a few TIPS.

a) Make sure that the meal is colourful.  It’s funny how presentation can go  along way!

b) A deconstructed salad (see photo) is a great way for your kids to choose what THEY like. This is perfect for those families where one child doesn’t like tomatoes and the other child does. (you know exactly what I mean..LOL).

c) Have fun with your food! Again – presentation goes a long way. This is a photo of a homemade healthy pancake with just a touch of Nutella.

d) Invest in a Spiralizer and turn boring vegetables into FUN vegetables. Trust me – this works!!

To ensure that I stay within my budget, I always shop at No Frills so I can get the best prices and take advantage of using my PC Points.  I signed up for the PC app when I attended the launch of the PC Plus program back in May 2013. I’ve been a faithful user ever since. In fact I’m pretty sure I was downloading the app while Kathy Buckworth was talking about it at the launch. (yup – I’m an eager beaver when it comes to saving $$)

There is no doubt that making healthy meals is important to me and it’s also important to me that I spend my money wisely. No question that the PC Plus program and No Frills helps me obtain my goals.

We all have our standard comfort foods, right? I have two comfort foods (with a twist) that I would like to share with you that might surprise you. I don’t know about you but as the temperatures start to drop and the days get darker, I’m seeking more and more “comfort foods”. There’s no question that my diet in the summer is different than my diet in the winter.

As always, No Frills helps me find the right ingredients for my healthy comfort foods at the right prices. I’m one of those people who’s aware of prices and No Frills has been my grocery store of choice for years to help me achieve my goals!

So here’s my two favourite healthy comfort foods…..with a twist!

a) GRILLED CHEESE SANDWICH WITH MUSTARD.

My dad taught me this trick when I was a teenager and often crave this sandwich on a cold wintery day. Try it – you might like it too!!

b) BAKED TOAST WITH COTTAGE CHEESE AND CINNAMON

I got introduced to this combo when I was on Weight Watchers many decades ago. Basically you take cottage cheese and spread it on a piece of bread. Sprinkle with cinnamon and bake at 350 degrees for 8-10 minutes.  The cheese gets all gooey and it’s truly a comforting snack.

I know that my local No Frills is always there to provide me with great prices and I can enjoy my comfort foods without having to spend a lot of $$. Naturally I love collecting my PC Plus points too. So don’t hesitate and download the PC Plus app today.  It’s a win win!!

I entertain a lot! But I really really enjoy it. I’m passionate about all aspects of entertaining….planning the menu, buying the flowers, setting the table, and cooking too! The only part I don’t enjoy is cleaning up and I’m quite sure that I will never enjoy that part!

Entertaining can be expensive but it doesn’t have to be! Here are some tips for Holiday Entertaining.

a) Try and not buy prepared foods. In fact, try and make everything from scratch. Trust me it will taste better AND it will be cheaper. I even make my own pita crisps!

b) Prepare a menu with vegetables that are in SEASON. This will really reduce the cost of your meal.

c) When I shop at No Frills, I’m confident that my grocery bill is going to be lower than shopping at competitors. Not to mention I can use my PC  points to help offset the costs of my meal! Im positively thrilled that PC Plus is now available at No Friils. It’s so easy to earn points toward dollars off your grocery bill and that’s right up my alley!!

c) Develop a menu where you get a lot of bang for your buck. For example, this apple crisp recipe or these two ingredient desserts.

d) My rule of thumb: soup/salad….one main course with three side dishes, and dessert.

I would like to end this blog post with a personal story: No Frills comes to my rescue EVERY year around Passover. I save up all my points for that one holiday where my grocery bill is going to be triple what it usually is. I received this “tip” from a friend years ago and have been following her advise every since.  (Thanks D.K)

There are some people who have 3 complete meals and never snack and there’s other people who have 3 meals and snack throughout the day.  I fit into the latter category.

So when I’m shopping at No Frills, I’m always on the hunt for ingredients for my meals AND my snacks. Not sure if you know this but PC Plus is now available at No Frills (hooray).

In the event you are wondering what’s PC Plus..…here’s your answer: It rewards customers with points toward dollars off your grocery bill. I don’t know about you…but I ALWAYS want to save money on my grocery bills. ALWAYS.

I now have the PC Plus app so it’s super easy for me to see weekly offers and to continue to save money. A Win Win if you ask me!

Here’s what I usually find myself snacking on: 

1. PC GREEK YOGOURT: I usually add some berries (raspberries, blueberries or blackberries) and before you know it …I’ve got myself a nice healthy snack that fills me up. Note: When those berries are out of season, I will use frozen berries.

2. SLICED TOMATOES:  One tomato goes along way. Sometimes I add some avocado on top and other times I add cheese. The end result is a healthy snack that looks oh-so-pretty! (don’t you think?)

3. SOUP: I know it seems weird but I adore soup and often find myself having a bowl in the middle of the day. It fills me up and it’s not expensive to make at all. Last week I noticed that canned tomatoes were on sale.  Naturally I ran home and made some soup: 1 tin of tomatoes, added 1/2 a boiled potato, a bit of fried onion and whizzed it up in my beloved Blendtec with some water. I had 4 cups of soup for less than $1.50 TOTAL.

4. Popcorn: To be perfectly honest…I want to snack on chips but it’s really not healthy for you. ARGHH. However popcorn isn’t a bad option. Therefore popcorn (air popped) has become a great alternative that in my opinion is “cheap and cheerful”.

None of the above snacks hurt my bank account and are pretty healthy…wouldn’t you agree?

I really wish I was one of those people that didn’t snack as much but I do. I try to be mindful to make sure that I’m not snacking cause I’m bored but that’s a whole separate blog post!!

The good news: No Frills and PC Plus…. helps me find the right snacks at the right prices! YAY PC Plus points…I love collecting them and love redeeming them too!

I haven’t made an interesting salad in a while and was in the mood for something refreshing. Not to mention, mint was on sale at No Frills for 99 cents and I always love a bargain!!

I was inspired to try this  recipe as it was posted today on twitter by @jenncuisine who has an amazing blog called JennCuisine. Her photos are WAY better than mine so I hope you go take a peek at her blog post too (which is a gluten free blog, by the way)

Grapefruit and Mint Salad (adapted from JennCuisine)

Ingredients:

1 grapefruit cut into small chunks

1 romaine lettuce, chopped

a few mint leaves chopped up (I use scissors for this step…so much easier)

balsamic vinaigrette (I used balsamic vinegar, olive oil, honey mustard, salt and pepper)

**note the original recipe calls for sliced cucumber too.

**note 2: this recipe is gluten free and vegan too

Instructions

Mix all ingredients into a bowl. Toss with dressing. Serve

I loved this salad as it was so refreshing and certainly different than any other salad I would normally make.

Hope to serve this salad along with grilled salmon and a quinoa dish. What do you think?

My mom went to Israel recently for an epic two week trip to visit some relatives that live in Ra’anana.  Over the last few years, I have asked her to bring me FOOD ITEMS from her travels and not handbags, belts, scarves etc. I’m really a foodie and she understands!!

This is what she shlepped in her luggage. (Thanks Mom).

1. Curry Flavored Sesame Seeds and Garlic Flavored Sesame Seeds.

Will be sprinkling these seeds on EVERYTHING

Too funny – I had the wasabi flavored sesame seeds in my freezer from my last trip to Israel!!. Im thrilled to see that this company has expanded their line. Last nite, I made the most delicious piece of terriyaki salmon and added the garlic flavored sesame seeds for added texture and flavor.

2. A Roll of Paper Towels (from Nikol)

Can Someone Please Make These Paper Towels in Canada? Pretty Please.

We actually fought over this item as she said “I only brought back ONE and I want it”. I begged her to unroll it and give me a quarter of the roll – which she agreed to. Now I should explain that this is not just ANY paper towel. It looks like a paper towel but it’s not. Its a cross between a paper towel AND a jcloth. Once its wet – it acts like a jcloth. How brilliant.

I have friends who are visiting Israel as I type this blog entry, and I’m hoping they squeeze a few rolls into their luggage. At least it doesnt add a lot of weight, right?

3. World Of Nuts – Cholent Mix

I make cholent every Friday and one day hope to blog about my special vegetarian recipe!! I usually buy a few bags of mixed beans and add them to the crock pock. I guess this offers me the convenience of having all the beans in ONE bag. Will find out on Friday.

4. Asian Home Gourmet – Spice Paste for Thai Tom  Yum Soup

Again, I bought these packets on my last trip to Israel only to find out that you can buy them at No Frills or Kosher City. (oops)  Not sure yet if this particular soup is available but I will soon find out.

 

5. Pomegranate Sauce

Im going to have a lot of fun with this sauce and intend on using it in a salmon dish.

Receiving “food gifts” makes me really happy. However I know I’m not going to be happy when I run out!! Good to know that I have friends who regularly go to Israel!!

I bake Challah every week. Well kinda – I cheat. At least, I’m honest, right?

I should take a minute and explain what is Challah!! Challah is a braided bread that is served on the Sabbath(Friday Nite to Saturday Nite) in Jewish homes. I grew up with Egg Challah from Rideau Bakery in Ottawa but when I moved to Toronto I discovered that there was a variety of different challahs. ie raisin, whole wheat, with a sugary coating on top etc.

I also found out that you could make it!! I tried – I really did but it was never as good as all my friends who make it on a regular basis. (you know who you are)

Then I discovered: FROZEN challah and never looked back. There are two competing brands out there – Montreal Kosher and Lenchner’s. Im not loyal – I just grab whatever I see.  I really think they are both amazing but some of my friends say that one rises better than the other. Perhaps one day I will try and test out both challah’s side by side.

Step 1: I usually buy it frozen from No Frills (at Bathurst/Wilson) or Metro (Bathurst/Lawrence). However you could find it at any major grocery store from Bathurst/Lawrence to Bathurst/Rutherford.

Step 2: I unwrap it, lay it on parchment paper and cover with saran wrap. Then I wait 6 hours. (not 4, not 5).

Step 3: I take the wrapping off, and put an egg wash on it (my fav. step)

Step 4: I put the challah in the over at 325 degrees F and bake for 35 minutes. (not 30, not 40).

I serve it on Friday nite and its generally GONE by Sat. Nite. However if you have leftovers – challah can be used to make a wicked french toast!!

I kinda like the whole wheat challah these days but truthfully they are all fanatastic.

All I know – is that this challah rocks and I look forward to making it every week. Baking challah makes my apartment smell great, and you can’t beat the convenience. Sure, it’s not the same as taking the time to make it from scatch – but I can’t get over the fact that IT ALWAYS COMES OUT amazing.
